Modified starch, also called starch derivatives, is a physically, enzymatically or chemically altered food ingredient made from starch by changing its properties for enhancing its performance in different applications. Modified starch serves different purposes in different industries and is used in all starch applications, such as in food products as a thickening agent, stabilizer or emulsifier agents due to its partially digestible nature and quality of being gluten free, and providing lesser fat than regular starches; in pharmaceuticals as a disintegrate; or as binder in coated paper. They are also used in many other applications and are also useful in easy manufacturing of recipes and cookery.

Modifications are usually done to increase their stability against excessive heat, acid, shear, time, cooling, or freezing; to improve water holding capacity; to change their texture; to decrease or increase their viscosity; to lengthen or shorten gelatinization time; or to increase their viscos-stability.
